In patisserie and confectionery, Gelatine determines whether a cream holds its shape when cut, whether a Jelly comes out of the mould with a perfect shine, and whether a dessert has the texture it should. Leaf gelatine is the most precise form: each sheet is a defined unit that can be portioned exactly – no weighing, no guesswork. RUF Leaf gelatine swells evenly in cold water, dissolves cleanly, and blends homogeneously into any mixture, preventing lumps and guaranteeing a uniform setting result. Odourless and flavour-neutral, it leaves no foreign aroma and preserves the natural taste of the ingredients completely – 12 sheets per pack, sufficient for 1 litre of liquid.
Dosage – depending on application and desired firmness
The correct amount of Gelatine depends directly on the application and the desired consistency. For Jellies and Cake glaze, 6 sheets per 500 ml are recommended for a clear, sliceable result. For cake fillings and creams that must stand firm when cut – particularly in tall, multi-layered cakes – 6 sheets per 500 ml is likewise the right guideline, so that the filling retains its shape when sliced and the cake does not collapse. For cream-based desserts such as panna cotta or bavaroise that are served directly in the glass or mould and should have a softer, more velvety consistency, 4 sheets per 500 ml are sufficient. If these desserts are to be turned out, 6 sheets per 500 ml are also recommended, so that the mixture safely retains its shape when unmoulded. In summer or at elevated room temperature, increase the quantity by 1 to 2 sheets per litre, as Gelatine is sensitive to heat. Always use the quantities specified in individual recipes.
Step by step to the perfect consistency
Place the required number of sheets individually in a bowl of cold water and soak for approx. 5 minutes until completely soft and pliable. Then squeeze out gently and dissolve at a low temperature – Gelatine must never be boiled, as excessively high temperatures will permanently destroy its setting power. For cold mixtures, do not pour the dissolved Gelatine in directly – instead, first add a little of the cold mixture to the Gelatine and stir, then add a little more to allow the temperatures to equalise gradually, and only then stir the tempered mixture into the remaining mass. This step is crucial: it prevents the Gelatine from lumping or forming strings on contact with the cold mixture, and ensures a smooth, even consistency. For warm mixtures, incorporate the dissolved Gelatine directly while stirring. Since Gelatine mellows sugar, salt, acids, and spices in the preparation, always adjust seasoning after adding it. Store RUF Leaf gelatine in a dry, cool place in a well-sealed container – it readily absorbs moisture and foreign odours, which can impair quality.
