Felchlin Couverture 36 % shows its full potential when it is tempered correctly and ensures a beautiful gloss and a crisp break. How do you temper the couverture? Go through the three stages of melting, cooling and reheating and ideally check the temperature with a chocolate thermometer. Make sure you prepare the molds correctly: clean them with lukewarm water and mild detergent, dry them thoroughly, polish them and only touch the edges; the mold should be at room temperature. Knock out air bubbles with a chocolate hammer so that the surfaces are even. What is the white couverture suitable for in everyday life? You can use it to mold your own chocolates and bars, make cake icing, create elegant decorations on PVC foil or produce a fine patisserie edge.
