Valrhona couverture is made in Tain-l’Hermitage in France’s Rhône Valley and is prized in fine patisserie for its distinctive, clearly defined flavours. Each variety has its own name and taste profile. It usually comes as flat discs (“fèves”) that melt quickly and evenly.
The Inspiration range – strawberry, raspberry, passion fruit and yuzu – is made from cocoa butter and fruit powder. It brings natural colour and genuine fruit flavour to coatings, pralines and ganache.
Temper dark varieties such as Guanaja and Caraïbe the classic way: melt to 45–50 °C, cool to 27–28 °C, work at 31–32 °C; milk varieties at 29–30 °C, Ivoire at 28–29 °C. Dulcey and Inspiration are handled much like white couverture – the values on the pack are what counts. Store Valrhona couverture somewhere dry and dark at 12–18 °C.
Guanaja for intense, bittersweet desserts; Caraïbe when you want a rounder, slightly milder chocolate, for example in pralines.
Yes, Azélia is a milk couverture with hazelnut. If you have an allergy, Jivara is the better choice – always check the ingredients list.
Yes, for coating, moulding, ganache and mousse. It contains no cocoa mass and is therefore tempered like white couverture.
