Aluminium template for Japonais, meringue & sponge bases Ø 14 cm, 3 mm

Aluminum template for Japonais bases Ø 14 cm, 3 mm

With the Ø 14 cm x 3 mm Japonais base template, you can create thin, even and perfectly round bases with consistent quality. The template prevents uneven thicknesses in the cake ring and allows you to work efficiently. It is ideal for japonais, roulade, chocolate and crispy bases. You can also fill it with tempered couverture to make clean chocolate lids. Place baking paper on the tray, place the template on top, apply the mixture in the middle and spread it evenly with an angled spatula. Lift the template, reposition it and repeat the process. Then bake at 160 °C fan oven for approx. 12 minutes, leave to cool and store the bases in a dry place. A practical tip: place four small dabs under the corners of the baking paper to ensure that nothing slips. The template ensures precisely round, thin layers that bake evenly. You can use it to achieve consistent results, even for multi-layer cakes such as the Dobos cake. An example recipe makes four 14 cm layers. Store the cooled bases in a dry place, not stacked and not in the fridge or freezer, so they will keep for up to 2 months.
