How to use a baking spray?

It’s super simple and effective: just spray a thin layer inside your mould or tray, making sure to cover the corners and detailed areas thoroughly. This prevents the mixture from sticking during baking. For moulds with fine designs, like those for madeleines or decorative cakes, a release spray is a true advantage. And if you want to make canelés without copper moulds, we recommend using beeswax instead to get that authentic caramelised flavour and perfect texture of the traditional canelés from Bordeaux.

When should I use my release spray?

However, if you're making a bavarois, we recommend using rhodoid instead of release spray to prevent the mousse from sticking to the ring.
