How is it used? Melt the couverture to 45°C, spread half of it on the plate with an angled spatula and gather it back together in the middle with the straight edge - this keeps the surface clean and creates the desired fat crystals for gloss. Use the metal horn to reliably remove excess chocolate from praline molds: fill the mold, tap out air bubbles, turn the mold to drain and clean the edges again before cooling the chocolate, filling it with ganache and then sealing it. What else is it suitable for? As a pastry cutter, it separates pastry pieces cleanly and smoothes buttercream on cakes. Hold the edge vertically for the sides and horizontally for the surface; with a rotating cake plate, you can achieve even results - counter-clockwise for right-handed users and clockwise for left-handed users. Thanks to the sturdy stainless steel blade, the metal horn is particularly suitable for cutting pastry and for precisely cleaning smooth surfaces in the patisserie.
