This stainless steel rack is the versatile helper for truffles, cakes, tarts and bread: ideal for cooling, glazing and as a heat-resistant trivet. Thanks to its fine pattern, the hinged grid with stainless steel feet creates characteristic hedgehog tips and the raised feet allow air to circulate evenly so that the bases neither dry out nor soften. How is it used? For classic truffles, fill hollow balls with ganache, seal them with a little couverture or form balls from firmer ganache. Dip the pralines into tempered, slightly firmer couverture with a round stamping fork, place them on the grid (baking paper underneath makes it easier to clean up) and roll the balls gently back and forth with a stamping fork with three or four prongs - the more liquid the couverture and the longer you roll, the smaller the tips. When cooling, place the rack near the oven, place bread, cupcakes and puff pastry directly on it and turn cakes out of the tin onto the rack after about 10 minutes; remove round cakes from the springform tin with a knife without prongs, open the tin and remove the base. To glaze, place the rack on clean baking paper, lift the cake or a frozen cake onto it using cake slices and a spatula or cake tray and pour Mirror Glaze or melted cake glaze drops over it; before the glaze sets, run a spatula briefly under the cake so that it does not stick to the rack and then transfer it to the cake plate or allow it to set briefly. With the hinged grid with you can cool baked goods efficiently, glaze them conveniently and protect the table as a trivet for hot casserole dishes and pots. After use, simply clean the stainless steel grid in the dishwasher; when folded, it can be stored away to save space.
