Almond filling, 200 g
What is it suitable for? For flavoring buttercream, cake fillings, desserts, ice cream, ganache, crispy bases or vanilla cream and also as a spread. How is it used? Fill hollow praline balls or shells with hazelnut filling using a piping bag, seal with tempered couverture and decorate with sprinkles, sprinkles or coconut flakes as desired. For a softer almond ganache, mix the cream with a little chocolate ganache. Creams for éclairs (e.g. vanilla or chocolate mousse), buttercream for macarons or cake fillings based on vanilla cream, yoghurt or quark can also be refined in no time at all. Add a little cream to an ice cream base to give it a fine almond profile; optionally finish with amaretto or almond brittle shortly before the end of the freezing time. The almond cream can be used on its own or mixed with ganache and various creams.
