Description
Pure powdered gelatin is an excellent quality, natural gelling agent derived entirely from beef hide. It has a Bloom index of 150, guaranteeing a gelling power suitable for a wide range of preparations.
Gelatin powder is ideal for thickening and binding creams, mousses, bavarians, custards and fruit jams. To achieve the perfect consistency :
- 20 g per litre gives a correct thickening, perfect for creams and mousses.
- 40 g per litre is needed for firm custards that won't run.
Preparing my gelatin powder
1. Pour the required amount of gelatin into a liquid.
2. Heat the mixture to 40°C, stirring constantly to dissolve the gelatin completely.
3. Caution: do not bring the mixture to the boil, as this will destroy the gelling properties.
4. Leave to cool, then place in the fridge to set.
Precautions: Gelatin cannot be used with certain fresh fruits such as pineapple, kiwi, papaya, mango or ginger, as these contain enzymes that prevent gelling.

Ingredient: bovine gelatin (100%).
May contain traces of: egg, milk and nuts.
