Whether pretzels, pretzel rolls, pretzel sticks, plaits or creative variations such as pretzel croissants - the lye provides the fine, crispy crust and the unmistakable taste that you know from real lye baked goods. It is easy to use, but requires careful work: Slowly add the lye pearls to cold water - never the other way around - as this creates a reaction that releases heat. A common mixture consists of about 40 g of lye pearls to 1 liter of water. The solution heats up to around 30 °C. During preparation and application, suitable protective measures such as gloves and safety goggles should always be worn to protect the skin and eyes. After piece proofing, the slightly dried dough pieces are dipped into the lye for a few seconds or evenly coated with it. They are then left to drain briefly, finished with incisions or toppings as desired and baked straight away. The typical shiny surface and aromatic, richly browned crust develop during baking. The finished lye can be stored in a well-sealed, lye-resistant container and used several times. It is important to store it safely out of the reach of children. After use, the lye can be diluted and disposed of or neutralized with acids such as vinegar or citric acid before being disposed of. All utensils used should then be thoroughly cleaned with water.
