Wooden beam for powder box

Kirschstängeli are among the finest confectionery specialties and combine a liquid core, a fine sugar crust and a delicate chocolate coating to create a unique indulgence. In order for this specialty to be produced in its typical form, a precise tool is indispensable: the stamping bar with the appropriate stamping motifs - an absolute must for the professional production of cherry sticks. This is exactly where the product comes into its own. When working with starch, a smooth, dry surface is first prepared in the frame. The stamp bar with the attached motifs is then pressed evenly into the starch. This creates clean, identical hollows - the exact shape of the later cherry stems. Without this tool, it would hardly be possible to produce uniform, professionally shaped stems. The stamp is therefore the central element in the entire production process. The stamps themselves are glued to a suitable wooden beam beforehand, with an even spacing so that the cherry stalks are later optimally portioned. After drying, the stamping bar is ready for use and ensures precise, repeatable results with every impression. As soon as the cavities have been stamped to the correct thickness, the hot cherry syrup - made from high-quality cherry and sugar - is poured into the cavities using a funnel. The precisely shaped wells ensure that the syrup can be poured in cleanly and takes on the typical elongated shape. The filled wells are then completely covered with starch. During a resting period of at least 24 hours, the sugar crystallizes and forms the characteristic fine shell around the liquid core. The precision of the stamp is also evident here: only cleanly formed hollows lead to uniform, stable cherry stalks. After resting, the stalks are carefully removed from the starch and any residue is removed. They are then coated twice with tempered chocolate coating and turned directly in cocoa powder. After hardening, they are ready to be packaged, given as gifts or enjoyed. The stamping bar with the individual motifs is therefore not just a practical tool, but the heart of the entire production process. It ensures shape, uniformity and efficiency - and turns a sophisticated confectionery technique into a reproducible process. This product is therefore indispensable for anyone who wants to make their own cherry sticks.
