Dough scraper, small

The small dough scraper is the classic helper in bakers' hands, often underestimated, but on hand at every step of the process. The combination of a stable edge and light flexibility makes it particularly versatile. The straight, stable edge is used for cutting off pieces of dough on the work surface. Small pieces of bread roll dough, portions for biscuits or pasta dough can be cut cleanly. The slightly flexible opposite side, on the other hand, clings to round bowls and helps to scrape out dough, cream or ganache without leaving any residue. The dough scraper also shows its strength when transferring to the piping bag. Hold the folded bag in your weaker hand, use your stronger hand to scrape out the mixture and pour it in quickly. When the bag is almost empty, lay it flat and push the rest forward with the back of the scraper. The scraper is heat-resistant up to around 100 °C and can therefore also be used with warm masses such as tempered couverture or freshly cooked pâtissière cream. Hot water is sufficient for cleaning, but the scraper is also dishwasher-safe. A small tool that constantly makes the difference between bowl, work surface, tray and piping bag.
