You can use marzipan, flower paste, fondant, Massa Ticino or modeling chocolate. Dust the work surface with baking starch to prevent the sugar paste from sticking. It is also advisable to use a silicone mat as a base. The sheets look best when the middle is slightly thicker than the edge. As soon as the desired thickness is achieved, cut out the flower with light pressure. Then press the ejector down to emboss a bud on the flower, which provides space for a sugar pearl or other decoration. You can then remove the flower with the ejector and decorate the individual flowers as desired. An airbrush can be used to create elegant color gradients.
