Dark pine cone praline shell, 48 pieces

These hollow praline molds in the shape of pine cones made from dark chocolate will bring the Christmas spirit to your bakery. The set contains 48 half molds, which are assembled into 24 finished 3D pine cones. Ideal for Advent, Christmas, Santa Claus and winter occasions. The dark chocolate with its strong note harmonizes particularly well with fillings with a strong character such as orange ganache, whisky or cognac ganache or intense mocha cream. A filling with spices such as cinnamon, cardamom or pink pepper is also an ideal combination. The application is simple: prepare the desired filling and allow it to cool to a maximum of 25 °C. Fill the mixture into the half-moulds with a piping bag until they are completely full. If you like contrasts, first fill halfway with a raspberry puree and then add ganache. Tap the mold lightly on the table so that the filling is evenly distributed and there are no air bubbles. To assemble: Pour some tempered dark chocolate onto the edge of one half of the mold and place the second half on top to fit snugly. Press briefly until the chocolate sets. This creates complete 3D pine cones with a filling inside. Decorate the finished chocolates with a little gold dust if required. The elegant 3D praline is ready.
