With the 21-piece wave praline mold made of dimensionally stable polycarbonate, you can make elegantly curved pralines that come out of the mold effortlessly after cooling and impress with their beautiful, brilliant shine. The mold has space for 21 pieces and is ideal for elegant gift boxes, assorted praline mixes or special occasions where a fine, modern motif is required. Before use, the mold is cleaned with lukewarm water and mild detergent, dried thoroughly and polished with lint-free absorbent cotton. This creates a flawless surface that ensures the chocolate shines perfectly. For optimum results, temper high-quality couverture carefully in three stages; a chocolate thermometer will help you to maintain the exact processing temperatures. If you wish, the cavities can be painted in advance with melted cocoa butter paint to create subtle accents or patterns. The molds are then completely filled with tempered couverture. Lightly tap the mold to raise air bubbles to the surface and ensure a smooth, clean result. Then cool the mold for a few minutes until the chocolates are completely set. If you want to fill the wavy pralines, first line the cavities with a thin layer of chocolate, allow them to set briefly and then inject the desired ganache or filling - 2-3 mm below the edge in each case. The chocolates are then sealed again with couverture, smoothed and chilled for around 20 minutes. Thanks to the dimensionally stable polycarbonate structure, the chocolate contracts slightly during cooling so that the finished pralines can be shaped cleanly, brilliantly and without effort.
