This dark organic couverture with a 60% cocoa content made from fine cocoa beans and selected Swiss ingredients is suitable for professional and creative applications. Felchlin 60 % 2.0 kg brings a fine melting texture and a harmonious cocoa note to chocolates, bars, desserts and decorations. How is it used? Temper the drops in three steps - melt, cool, reheat to processing temperature; a chocolate thermometer ensures precision. Prepare molds carefully: clean with mild detergent, rinse with lukewarm water, dry well, polish, handle only by the edges and use at room temperature; knock out air bubbles with a chocolate hammer. What is the couverture suitable for? For hollow praline shells, chocolate bars, elegant decorations on PVC foil or as a glazing coating for cakes and gateaux. The couverture can be used untempered for fillings such as ganache: Bring the cream to the boil, pour over the drops and stir into a creamy mixture.
