With the gift praline mold, 28 pieces made of dimensionally stable polycarbonate, you can make even, shiny pralines that come out of the mold effortlessly and shine perfectly after cooling. The mold has space for 28 pretty gift motifs - ideal for elegant gifts, assorted boxes of chocolates or festive occasions. Before use, clean the mold with lukewarm water and mild detergent, dry thoroughly and polish with lint-free absorbent cotton. For perfect results, use high-quality couverture and temper it carefully in three stages; a chocolate thermometer helps to maintain the exact processing temperatures. Optionally, the hollows can first be painted with melted cocoa butter paint. They are then thinly lined with tempered couverture, excess chocolate is removed with a metal horn and the mold is completely filled. Tap lightly to raise air bubbles to the surface, then turn the mold over and allow the excess chocolate to run out. Then leave to cool for about five minutes. Pipe the ganache to 2-3 mm below the edge and leave to rest at room temperature for around an hour. Then seal the chocolates with tempered couverture, smooth the surface again and chill the mold for approx. 20 minutes. Thanks to the dimensionally stable polycarbonate structure, the chocolate contracts slightly during cooling, allowing the finished hollow shapes to be formed cleanly and shiny.
