The cake ring Ø 18 cm x 3 cm allows the heat to reach the dough optimally thanks to the lack of a base, especially on a perforated tray, and thus ensures an evenly baked sponge cake. How do you use it? Place the ring on a flat tray lined with baking paper, pour in the sponge and leave enough room for it to rise. Leave to cool completely after baking; cover with a second tray for use the next day to retain the moisture. Loosen the edges with a knife and cut the bases as desired - preferably evenly with a cake cutter or cake saw. For layering, line the cleaned ring with a cake liner strip. Do not use the final plate, but a small cardboard base (1-2 cm smaller) with a slightly larger cake base underneath to make it easier to move the cake later. Insert a slice of sponge cake or prepare a crispy base, then fill it as desired; even thick ingredients such as caramel or cake jelly will not run out. The finished cake can be set in the fridge or freezer, after which the ring can be easily removed thanks to the insert strips and is dishwasher-safe.
