For sponge bases, the clean layering of fillings and the shaping of heart-shaped cakes. How is it used? Place the ring on a flat tray lined with baking paper; a perforated tray is ideal. Fill the sponge sparingly as it will rise during baking. Leave to cool completely after baking; if the base is not to be used until the next day, cover with a second tray to retain the moisture. Loosen the sponge from the edge with a knife and cut even slices with a cake cutter or cake saw. For layering, line the cleaned ring with a strip of cake liner. Do not work on the final cake plate: use a small cardboard base that is 1-2 cm smaller and a slightly larger base underneath so that the cake can be lifted and moved easily.
