This triangular ring is ideal for baking airy sponge cakes and for the precise construction of cakes. What is it suitable for? For use in the oven and for cooling and freezing in the fridge or freezer. How is it used? Place the ring on a flat baking tray with baking paper; on a perforated tray, the heat reaches the dough particularly evenly. Fill it with sponge mixture, but not too high, as the dough will rise. As there is no integrated base, the sponge cake bakes evenly and remains airy. Leave to cool well after baking; if storing overnight, cover the sponge cake with a second tray to retain the moisture. Loosen the cake from the edge with a knife and cut the bases as desired, preferably evenly with a cake cutter or slicer. For layering, place a small cardboard base (1-2 cm smaller than the cake) on a slightly larger cake base, insert a sponge base or crispy base and fill as desired - even thick components such as caramel or cake jelly remain safely inside thanks to the ring. If required, use a cake insert strip for clean edges. The cake is then chilled or frozen to set.
