What is the difference between oil-soluble and water-soluble food colouring?
As their names suggest, oil-soluble colourings (lipo=fat) are oil-based. They need fat to be diluted and to bring out all their pigments. That's why they are used to colour white chocolate, butter, cocoa butter, and ganaches.
Water-soluble colouring, as indicated by its name (hydro=water), is water-based. It is ideal for use in preparations such as sponge cakes, macaron shells, mirror glaze, and cookies, but it is never suitable for colouring chocolate.
Whether water-soluble or oil-soluble, you can find them in powder or liquid form.
Oil-based liquid colouring:
