What is it particularly suitable for? As a direct praline filling or for flavoring buttercream, ganache, vanilla cream, cake fillings, ice cream, crispy bases and desserts - even as a spread. How is it used? Fill the cream into a piping bag and pipe it into hollow praline balls or shells; then seal with tempered couverture and decorate as desired. For a milder, creamier version, mix in a little ganache. Éclairs also benefit from a vanilla or chocolate mousse with a proportion of white chocolate filling with cookie crunch. For cakes, stir the lightly whipped cream into a yoghurt, quark or vanilla cream to create a harmonious filling with a fine crunch in no time at all.
