The pistachio cream 45% pistachios, 250 g enhances pralines, cakes, éclairs and macarons and provides a distinct pistachio aroma. What is it suitable for in everyday life and in the patisserie? It is ready to use straight away, can be used on its own or mixed with white couverture to make ganache, buttercream, vanilla cream or mousse. How is it used? For pralines, fill the cream into a piping bag, cut off the tip and pipe directly into hollow balls or shells; then seal with tempered couverture and decorate with sprinkles or pistachio brittle as desired. For a milder filling, mix the cream with chocolate ganache beforehand. For cakes, make a vanilla, yoghurt or quark cream and fold in some of the whipped cream.
