You've made a Christmas log, but you don't know how to make your mirror glaze?
Opt for this simple and effective solution by using this beautiful iridescent red glaze! It will be ideal for logs, entremets, mousses or bavarois and is suitable for all types of pastries.
However, it is imperative that your pastry is frozen, otherwise your glaze will never stick to your log, entremets, ...
Instructions: dilute 300g of glaze with 20g of water. Heat the pot in a water bath to 50°C (without the lid), stir the mixture regularly with a whisk. The glaze should be poured over your frozen mass once it has reached 45°C!
Ingredients: glucose syrup, water, pectin, sodium alginate, carrageenan, citric acid, sodium citrate, calcium lactate, tricalcium phosphate, potassium sorbate, colorants : E555, E172, E129*; flavor
