Dark couverture 70% - 2.0 kg
Dark chocolate coating with 70% cocoa, conched for 48 hours: intense aroma with notes of black tea, plum, banana, orange and fine vanilla. The cocoa beans come from Venezuela, Ecuador and Bolivia. What is this couverture suitable for? For high-quality pralines, chocolate bars, delicate decorations as well as cake icing or patisserie edges. How is it used? Temper in three steps: melt, cool and reheat to processing temperature; a chocolate thermometer helps you to check. Before pouring, clean molds with lukewarm water and mild detergent, dry thoroughly and polish with non-fraying absorbent cotton; then only touch the edges. Make sure the mold is at room temperature and knock out any air bubbles with a chocolate mallet. The couverture does not need to be tempered for fillings: boil the cream, pour it over the couverture and stir into a creamy ganache - ideal for pralines, tarts and cakes.
