Achieve a delicately melting gloss for chocolates, bars and decorations with finely dosed milk chocolate drops. What is the couverture suitable for? For pralines, chocolate bars, cake icing, patisserie edges and delicate decorations on desserts. The balanced proportion of cocoa and milk ensures a warm sweetness with a slight malty aroma; the cocoa intensity is around 2 out of 5. Thanks to the practical drop shape, the mass melts evenly and can be processed precisely. How is it used? For coatings and hollow bodies, the chocolate coating must be tempered: melt, cool, then reheat to processing temperature. A chocolate thermometer helps to ensure that the temperature is correct. Tempering is not necessary for fillings (e.g. ganache made from cream and couverture). Chocolate figures can be molded from the tempered couverture; air bubbles are best knocked out with a chocolate hammer. Make sure that molds are cleaned thoroughly, polished thoroughly and kept at room temperature.
