With its dimensions of 40 x 30 x 2.5 cm, it fits perfectly on an oven rack and in gas or charcoal grills with a lid and ensures optimum baking results at high heat both in the domestic oven and on the grill. For use in the oven, place the bread baking stone on a rack in the middle of the oven while it is still cold and heat it up to the highest possible temperature together with the oven. It is important that the stone is completely dry and is never placed directly in an oven that is already hot, otherwise it could be damaged. After around 25 to 30 minutes, the stone is fully heated and ready for use. Thin doughs such as pizza or tarte flambée benefit from particularly high heat and quickly become crispy, while you should keep an eye on the crust formation on breads. In the charcoal grill with lid, the charcoal is first glowed through in the chimney. The stone can be leaned against the side for preheating or used directly by starting the chimney starter on it and then spreading the glowing coal underneath. Any ash residue should be removed afterwards. After baking, leave the stone to cool completely. Flour residues can simply be brushed off, while thicker residues can be removed with a wire brush or a ceramic hob scraper. Cleaning with water or washing-up liquid is not necessary and should be avoided, as the high temperatures during baking kill all germs. Any stains that remain are purely visual and do not affect the function.
