With cocoa nibs from Nicaragua, you can enjoy cocoa in a practical and versatile form. The nibs are ideal as an ingredient for chocolate, pastries, desserts, muesli or as a crunchy topping. The beans taste fruity, berry and sweet. There are also subtle citrus notes. The acidity and bitterness remain subtle. The beans belong to the Trinitario group. They are harvested from October to December and from April to June. The beans come from the regions of Jinotega and Matagalpa. There they are cultivated by the large Chuno family. This network comprises over 1000 cocoa producers. The Ingemann company is responsible for collecting the beans and the subsequent logistical steps. The producers are also part of the four-year Adapta project. Cocoa nibs are broken and shelled cocoa beans. They add an intense cocoa flavor, subtle roasted aromas and a pleasant bite to many recipes. They can be used directly, ground with other ingredients or used in baked goods, chocolates, granola and desserts. If you want to work with original cocoa or give your recipes more character, these nibs are an excellent choice.
