What are they suitable for? As a mold for filling directly with rather firm ganache or as a pretty shell for already made molded and cut chocolates. For the simple filling, boil 50 g of cream and pour it over 125 g of dark or milk couverture pieces. Stir gently until the mixture is smooth, cover directly with cling film and chill. As soon as it is relatively firm, stir well again, pour into a piping bag, fill the round capsules to the brim and decorate as desired - for example with crunchy pearls, a few dried flowers or a small mocha bean. For special accents, insert a roasted hazelnut beforehand, flavor the ganache with a little mocha paste or add chili threads as a finishing touch. Then leave to set in the fridge and, if desired, give as a gift in an elegant cardboard box.
