Pearl sugar coarse grain - Cassons for Liège waffles

Coarse-grained pearl sugar, also known as cassons, is the typical ingredient for authentic Liège waffles. These irregular pieces of pressed sugar provide the characteristic caramelized, crunchy sugar pearls that cannot be achieved with normal granulated sugar. In contrast to classic granulated sugar, which is finer and more uniform, this pearl sugar has a coarse diameter of around 10 mm. This size gives it a particularly high heat resistance: when baked, the sugar does not melt completely, but slowly caramelizes on the surface, while the core remains slightly crunchy. It is precisely this characteristic that gives Liège wafers their typical texture - soft on the inside and wonderfully caramelized and unbeatably crispy on the outside.

Versatile use in the patisserie

In patisserie, pearl sugar is not only used for waffles. It is indispensable for chouquettes, small choux pastries that are sprinkled with heat-resistant sugar granules. Brioches and pain au sucre also benefit from the caramelized sugar pieces, which create a wonderful contrast between the soft crumb and crunchy sugar flakes. This pearl sugar is also perfect for decorating Viennoiserie, cramique or craquelin.

Application tips for perfect results

For Liège waffles, we recommend using around 150 to 200 g of pearl sugar per kilogram of dough. Only add the sugar at the very end after kneading so that it does not dissolve. For chouquettes, you can lightly moisten the surface of the choux pastry before sprinkling the sugar grains on top - this will help them to stick better when baking. For brioches or pain au sucre, the pearl sugar is best sprinkled on generously just before baking.

Practical tip for storage

Always keep pearl sugar dry and protected from moisture. Moisture can soften the grains and impair their ability to remain stable during baking. Stored correctly, pearl sugar will keep for a very long time without losing its properties.
