Green lye cloth, 78 x 57 cm

This cloth helps you to make typical pretzels and rolls with an even brown crust. The green 78 x 57 cm leavening cloth can be unfolded at the sides to accommodate several rows of dough pieces. It is germ-reducing and dirt-repellent. What is it suitable for and how is it used? Form rolls or pretzels, place them on the cloth and fold it slightly if necessary so that the dough pieces do not stick together. Cover them first; allow them to dry slightly just before leaching so that a fine dough skin forms and the lye remains on the surface. Pour 1 liter of cold water into an acid- and lye-resistant container. Put on safety goggles and chemical-resistant gloves and add 40 g of lye pearls to the water; the solution will heat up to approx. 30 °C. Dip the dried dough pieces one by one into the lye for a maximum of 4 seconds (ideally with a ladle), allow to drain briefly and place on a baking tray lined with baking paper. Then bake the leached rolls or pretzels according to the recipe. The lye can be stored in a well-sealed container or disposed of diluted. Rinse the utensils thoroughly; neutralization is possible with citric acid, carbonic acid or acetic acid. Do not remove safety goggles and gloves until the lye has been safely sealed or completely washed away. With the green 78 x 57 cm lye cloth, you can prepare your lye baked goods efficiently and cleanly.
