Monin passion fruit syrup gives cocktails, mocktails and hot drinks an intensely fruity profile and adds elegant passion fruit notes to creams, mousses and cookies in confectionery. How is it used? Dose directly into the glass according to taste, shake the mix in a shaker or soak sponge cake for an aromatic kick. For a passion fruit tart, bake a 20 cm light sponge cake, cut it into slices the following day and prepare an airy cream: boil 70 g sugar with 30 g water, beat 60 g egg yolk and 50 g whole egg and pour in the sugar syrup while mixing. Soak 4 sheets of gelatine in cold water, mix 40 g of syrup, 60 g of freeze-dried passion fruit and 30 g of powdered sugar into the egg mixture, melt the gelatine and adjust, then fold in 600 g of whipped full cream. Spread half of the filling on the first sponge, place the second slice on top, drizzle as desired and finish with the remaining cream; chill for at least 4 hours.
