With the mocha paste, 230 g, you can add a creamy coffee note to cakes, éclairs, macarons and ice cream in no time at all. The paste can be used on its own or simply mixed with ganache and various creams. It is ready to use immediately: Pour the cream directly into a piping bag, fill hollow praline balls or shells with it and then seal them with tempered couverture. The chocolates can be decorated with sprinkles, sprinkles, coconut flakes or a pistachio if desired. The mocha paste is also ideal for flavoring vanilla or chocolate mousse for éclairs, buttercream for macarons and cake fillings based on vanilla, yoghurt or quark cream. For a softer intensity, it can be mixed with chocolate ganache to make a fine mocha ganache.
