The plastic bowl with a capacity of 8 liters is part of the basic equipment in every bakery and kitchen. It supports the preparation, mixing, kneading, proofing and storage of a wide variety of mixes. Always work on a low setting and stir frequently when heating delicate masses such as chocolate or ganache. Bread and yeast doughs rise particularly well in a lightly oiled plastic bowl; the reduced adhesion makes it easy to remove after rising. When whipping egg whites, make sure that the bowl is absolutely free of grease, as even the smallest traces of grease will prevent stable beaten egg whites.
