First prepare your bread dough with yeast or sourdough according to the recipe and leave it to rest during the proofing process. As soon as the dough is ready, prepare the proofing basket. Knock any residue out of the basket or clean it carefully with a brush. Then sprinkle the basket well with flour to prevent the dough from sticking later. Then shape your dough and place it in the prepared proofing basket. Cover the dough with a dough plastic or cloth and leave it to rest at room temperature according to the recipe. After piece proofing, carefully turn the dough out of the basket and place it on baking paper, a preheated bread baking stone or in a hot cast iron pan. The proofing basket itself must not be baked at the same time. After baking, the proofing basket should be left to dry completely. Once the basket is completely dry, excess flour can simply be knocked out. Small pieces of dough can best be removed with a small cleaning brush for proofing baskets. It is important that the proofing basket is never cleaned in the dishwasher or under running water.
