Trempier fork spiral

Fine coatings and decorations are easy to make with the dipping fork. Dipping the truffles requires a little skill, but the beautiful results are worth the effort. Sprial-shaped dipping fork - Application: Fill your hollow balls with a filling of your choice and seal with couverture. This must set before you can decorate the chocolates. Then you can remove them from the mold and place two chocolates at a time in the tempered couverture. The couverture must not be too warm and the chocolates should not remain in the mixture for too long, otherwise they could melt. If this does happen, remove the melted coating and all the leaked filling generously without stirring. The intact hollow balls are now pressed down lightly with the stamping fork and then loaded onto the wire circle in a curved movement and lifted. Round chocolates hold very well in the round stamping fork. However, if the hollow balls are somewhat larger, a spiral-shaped stamping fork is more suitable. The large hollow balls can simply be loaded and no longer fall back into the couverture after stamping. Now lightly tap the edge of the container with the stamping fork so that the excess couverture drips off. Further decorations are very easy to make. For example, roll the pralines in chocolate sprinkles, colored sugar sprinkles or roasted ground hazelnuts. To achieve the typical hedgehog spikes, roll your truffles on a truffle grid using a second trempier fork with prongs. It is helpful here if the couverture is not too runny. This stamping fork saves you time without compromising the beauty of your truffles. Create different decorations and surprise friends and family with fine, homemade chocolates.
