So here is this new product. It consists of cocoa butter powder. It's 100% natural, gluten-free and lactose free! It will facilitate the task when you temper your chocolate to obtain creamy masses and delicate. It also has the ability to hold in high temperature preparations.

You can also use it to dilute your Deco Melts chocolates.

Ingredients: 100% pure cocoa butter.



Storage advice: Store in a dry container in a dry place at 16-20 ° C.

Cocoa butter is a 100% powder made from pure cocoa butter. This is a noble fat - 100% vegetable, obtained by the cryogenization of cocoa butter (freezing at very low temperature), a totally natural process.

The Technique :

  1. Melt your chocolate at 45-50°C (in the microwave or in a bain-marie).
  2. Let the chocolate cool (to 34-35°C for dark or 33-34°C for milk, white or coloured).
  3. Add the cocoa butter powder (10g for 1kg).
  4. Mix until the temperature of 31-32°C for dark, 30-31°C for milk and white is reached.
