Temper the chocolate coating in three stages - melt, cool, reheat - and check the processing temperature with a chocolate thermometer. Prepare the mold carefully: rinse lukewarm with mild detergent without lye or rinse aid, rinse thoroughly with lukewarm water, dry very well, polish with non-fraying absorbent cotton and only touch the edges; the mold should be at room temperature. For color effects, heat cocoa butter paint to approx. 40 °C (in short intervals in the microwave or in a warm water bath), place sprinkles over the edge of the spoon with a brush, leave to dry for 5-10 minutes and then spread over the entire surface of the mold; remove excess paint with the metal horn. Fill tempered couverture, mixed with dry ingredients if desired, into a piping bag, tap the mold lightly, chill for 10-15 minutes and release the bars; chill a little longer if necessary. Vary the finish with dried fruit, chocolate gitattos or a touch of metallic powder. What is a dimensionally stable polycarbonate mold suitable for? After polishing, it provides a beautiful shine and the bars release easily thanks to cold-induced contraction - unlike flexible silicone.
