What are the flakes particularly suitable for? For pralines, mix them into a lightly whipped almond or hazelnut filling and fill the cream directly into hollow balls; use tempered couverture to seal them. If you want to add crunch to a ganache or buttercream for a short time, add a few flakes and serve the pastries promptly, as the flakes soften over time. How is it used in chocolate? Mix tempered couverture with the flakes, pour the mixture into chocolate molds or onto baking paper and break off pieces after cooling. The 100 g in the resealable bag are ideal for the bakery and can also be elegantly colored with a little gold dust as decoration. For a stable crunchy base, mix the flakes with couverture and press the mixture into a cake ring as a base.
