Fill the mold with the mixture, insert the sticks and bake or freeze for at least four hours, depending on the recipe. For a simple frozen yogurt on a stick, mix natural yogurt with Monin syrup of your choice, fill the mixture into the mold and insert the sticks. For sorbet, use syrup or fruit puree. Once completely frozen, you can dip the sticks in couverture melted to around 40 °C, remove immediately and sprinkle with almond or hazelnut brittle, cocoa nibs, almond slivers or crunchy pearls as desired; then place on baking paper and freeze again. Wooden sticks make serving clean and easy - for relaxed moments when serving and enjoying.
