Perfectly tempered chocolate is the basis for shiny, crisp and high-quality creations - with the professional-quality Digital tempering device, 6 liters, you can achieve this particularly conveniently and precisely. Thanks to the large work surface and reliable temperature control, you can work efficiently and achieve consistent results. The large surface is ideal for working with hollow praline molds: You can turn your polycarbonate mold directly over the appliance and tap it out without having to laboriously pour the excess couverture back over baking paper. Up to 6 liters of chocolate can be easily processed - ideal for ambitious hobby users as well as for larger productions. The tempering device is versatile and is perfect for crisp chocolate bars, fine pralines and figures as well as for stamping truffles and cut chocolates. It provides reliable support for all applications that require precise temperature control and consistent quality. The use is simple and well thought-out: Switch on the plugged-in device at the back and set the desired temperature continuously - the scale goes up to 60 °C, although chocolate should not be heated above 45 °C. To temper, first set the temperature to around 45 °C and pour two thirds of the couverture into the stainless steel container. Depending on the quantity, cover and leave to melt for 2 to 4 hours, stirring occasionally. Then reduce the temperature to 26 to 29 °C and add the remaining couverture drops. Stirring occasionally, these melt gently. Any remaining pieces can be carefully reheated with a hot air blower if necessary. Finally, bring the mixture to a processing temperature of around 29 to 33 °C. A spatula test is recommended for checking: leave some couverture to set for 5 to 10 minutes - or briefly in the fridge if the room temperature is high. The surface should be firm and shiny, while a fingerprint remains clearly visible - a sign of perfectly tempered chocolate. The appliance is also easy to clean: the stainless steel container and lid are dishwasher-safe and easy to clean. The housing is simply cleaned with a soft cloth and a mild detergent.
