Maracaibo Grand Cru Couverture 65 % from Felchlin 2 kg
This dark couverture made from 65% cocoa delights with notes of coffee, plum, orange blossom and raisin, gently rounded off with a subtle hint of cinnamon. The cocoa beans come from Sur del Lago in Venezuela; the Couverture Grand Cru Maracaibo 65% comes in a 2.0 kg format for professional applications. What is this couverture suitable for? For praline shells, bars, coatings, filigree decorations as well as cake icing; it is also excellent for making ganaches. How is it used? Temper before pouring: melt, cool and reheat until the working temperature is reached; a chocolate thermometer helps to check this. Clean the molds in advance with lukewarm water and a mild detergent (without lye/shining agent), dry well, polish and bring to room temperature; air bubbles can be removed by gently tapping. The couverture does not need to be tempered for fillings: Bring the cream to the boil, pour over the drops and emulsify into a smooth ganache.
