For a chocolate egg that's shiny, crunchy and comes out of the mold without a hitch, tempering is an essential step. This technique involves bringing the couverture chocolate to precise temperatures to stabilize the cocoa butter and achieve optimum crystallization.
Here are the tempering curves to follow, depending on the type of chocolate:
- Dark chocolate: melt at 50-55°C, cool to 28-29°C, then rise to 31-32°C.
- Milk chocolate: melt at 45-50°C, cool to 27-28°C, then rise to 29-30°C.
- White chocolate: melt at 40-45°C, cool to 26-27°C, then rise to 28-29°C.
To check your tempering, place a pinch of chocolate on a sheet of parchment paper: it should set in 3 to 5 minutes, with an even, satiny appearance. Poorly tempered chocolate will show white streaks (fat whitening) and will be difficult to unmold. We recommend using a kitchen thermometer for precise control. With the right tempering, your chocolate eggs will have that characteristic "crack" when tasted, which makes all the difference.
Tutorial: moulding a chocolate egg step by step
Anyone can make a beautiful homemade chocolate egg. Here's the complete method:
- Prepare your mold: make sure it's perfectly clean and dry. Polish the inside with absorbent cotton to remove any fingerprints - the secret of impeccable shine.
- Temper your chocolate according to the curves indicated above.
- Pour the chocolate: fill each half-shell to the brim, then turn the mold over the bowl to let the excess run off. You'll obtain an even layer of about 3-4 mm.
- Scrape the edges: run a spatula along the edge of the mold to obtain a clean seam.
- Allow to crystallize: place the mould upside down on a wire rack for 5 minutes at room temperature (18-20°C), then refrigerate for 15-20 minutes.
- Apply a second layer if necessary to reinforce the shell, especially for larger sizes (500 g and over).
- Unmold: well-tempered chocolate shrinks slightly and can be removed from the mold with a simple movement.
- Assemble the two half-shells: lightly heat a griddle or frying pan, place the edge of one half-shell on it briefly to melt it, then press the two halves together.
For a surprise egg, slip in a plastic capsule containing a small toy or message before assembling the shells. Kids love it!
