It provides the ideal balance between a delicate consistency and reliable stability - exactly what characterizes high-quality desserts and cakes. Leaf gelatine is ideal for a wide range of applications: Whether airy creams, fruity jellies, fine cake fillings or glossy glazes - with the right dosage, your creations will have the desired texture and retain their shape. It is also ideal for homemade jelly babies or other jellied specialties. Bovine gelatine is an ideal alternative to conventional porcine gelatine. It offers the same reliable binding power and processing, but is particularly suitable for anyone who wants to avoid pork products for religious or personal reasons - without compromising on quality or functionality. Gelatine really comes into its own with glazes: With a solidification point of around 25 to 35 °C, the glaze can cool sufficiently without any underlying creams or masses melting. Compared to vegetable gelling agents, the stability is maintained for longer and ensures an even, attractive result. Correct handling is crucial for optimum application. First soak the gelatine leaves in cold water until they are soft. Then squeeze them well and carefully dissolve them at a low temperature while stirring - without boiling them, otherwise they will lose their gelling power. Then "adjust" the gelatine: add some of the prepared mixture to the melted gelatine, stir well and add this mixture back to the rest of the cream. This avoids lumps and ensures even binding.
