On a cake, the figures can be arranged freely – flat on the surface, upright at the edge or lightly pressed into the Buttercream. Chocolate is sensitive to heat – this is the most important point to bear in mind when using and storing the figures. At temperatures above approximately 20–22°C, chocolate begins to melt and the figures lose their shape. Always store the figures in a cool, dry place, protected from direct sunlight and heat sources, and place them only on completely cooled baked goods. In summer, it is advisable to place the figures on the cake shortly before serving and to keep the decorated cake in the refrigerator until then. Store any remaining figures in a cool, dry, light-protected place at a maximum of 20°C in the original packaging – this way they retain their shape and shine until use.
