Good bread tins support soft doughs, give an even crumb and turn sandwich loaves, tin loaves and party breads into neatly shaped bakes. Which tin for which bread?

  • Lidded sandwich tin: the lid limits the rise, giving the classic square loaf with a fine, even crumb. Without the lid, the top will dome.
  • Non-stick metal loaf tin: for brioche, tin loaves or rye blends that would spread without support.
  • Wooden baking mould: the bread is baked in the mould and can be sold or given as a gift in it; the matching liner stops it sticking.
  • Cast-iron bread pot: stores heat, traps steam and delivers a particularly crisp crust – available round or rectangular.
  • Perforated trays and silicone moulds: for baguettes, mini baguettes, burger buns or focaccia; the holes let moisture escape for a crisp base.

Size and preparation

As a rule of thumb, the dough should fill the tin by half to two thirds before the final proof. For a tin 25–30 cm long, allow roughly 500 g of flour. Grease metal tins lightly and dust them with flour. With cast iron, simply preheat the pot well and lower the dough in on baking paper. Stand silicone moulds, ungreased, on a baking tray.

Frequently asked questions about bread tins

Do I need to grease a lidded sandwich tin?

Yes – even non-stick tins benefit from a thin film of fat, including inside the lid, which the bread pushes against as it rises.

How do I clean a cast-iron pot?

Enamelled cast iron can be washed with hot water, a little washing-up liquid and a soft sponge. Bare cast iron should be cleaned with water and a brush only, then lightly oiled. In both cases, avoid the dishwasher and never plunge a hot pot into cold water.

Which bread tin is best for beginners?

A lidded loaf tin or a cast-iron pot is the most forgiving: the dough is supported, so the loaf turns out well even if your shaping is not yet perfect.
