For airy sponge cakes as well as moist brownie cakes, whether layer cakes with layers of the same thickness or soaked cakes with one thinner and one thicker slice. How is it used? Ideally, leave the cake to rest in the cake ring, covered, for a day, then remove it from the ring with a knife without prongs and place it on a flat work surface. Slide the wires left and right to the desired height, snap them into the notches and make the cut with a smooth, sawing motion while holding the cake lightly. The resulting slices can be filled with cream or ganache, soaked or frozen for later use.
