Using Rhodoïd Rolls

Difference Between Guitar Paper and Rhodoïd

Guitar paper is normally translucent while Rhodoïd is transparent. Both types of papers are commonly used in cooking and pastry. The main difference between the two lies in their composition and properties. Guitar paper is a very thin and smooth parchment paper, usually coated with silicone on both sides to prevent food from sticking. It is ideal for working with chocolate, candies, and sugar decorations. Rhodoïd, on the other hand, is a transparent and flexible but stiffer plastic film, usually made from polyethylene. It is mainly used for making chocolate decorations, entremets, bûches, or for lining molds. Its flexibility allows it to adapt to different shapes, and its transparency makes it easy to view the final result. In summary, guitar paper is more flexible and ideal for flat decorations, while Rhodoïd, being stiffer, can be used vertically to line molds and, for example, be cut to obtain precise shapes. Both are indispensable tools in pastry making for perfect finishes and neat presentations.
