Arabic Gum is increasingly used in many more recipes. But what is it really used for and what does it replace?
It will act as a thickener, emulsifier and binder.
Arabic gum will be used mainly in the making of marshmallows as well as for the coating of your almonds. But, you will also find it in recipes for Lokum or gazelle ankles.
It will replace or can be replace in some recipes by corn starch, agar-agar or gelatin.

Ingredients: acacia gum Seyal
Solubility: soluble in cold or hot liquids.
Dosage: 3-5 g/kg according to the recipe.
Use: Powder form and dilute in cold or hot liquid.
