Pectin NH, 30 g
In confectionery, this gelling agent ensures even, clear gels with a perfect consistency and a glossy finish - ideal for fruit toppings, fruit coatings, mirror ice cream and fruit inlays in cakes, tarts, desserts and pastries. What is it particularly suitable for? For jellied coatings and fillings with fruit flesh that remain stable and are easy to cut. How is it used? Mix the pectin with the sugar, slowly trickle the mixture into the watery, fruity preparation while stirring vigorously and heat. Stir until a uniform mass is formed; the pectin dissolves quickly at 80-85 degrees. Gelling takes place after heating and final firmness is achieved after 24 hours. Dosage: 8 to a maximum of 12 g pectin per 1 kg total mass. Pectin NH impresses with its high gelling power, excellent stability and very good freezing properties.
